Yale’s Young Entrepreneurs Drive The Future of Vegan Convenience Food

Zoni Foods is a new startup company that has created frozen, plant-based meals, ready to be re-heated and eaten in only 10 minutes; straight from the packet which preserves the flavour and nutritional value of the meals.

Yale students Nilofer Ahmed and Zoe Lloyd are the co-founders behind Zoni Foods, starting the initiative when they felt the need for convenient, healthy and affordable meals which require minimal cooking but taste like a truly home-cooked meal. Finding a gap in the marketplace, these forward-thinking, innovative Yale students went for it.

Every Zoni Foods meal contains a complete serving of protein and starches with a nut-based sauce and unlike most other microwavable meals, these meals have a low sodium content; “You have everything you need to whip up a 100% natural plant-based meal you can feel good about in just 10 minutes on your stove.”

The meals include three delicious options: zesty peanut noodles with black bean fritters, sweet potato spirals with garlic cashew sauce and lentil-mushroom-kale fritters, and ‘coconut curry noodles’; carrot and zuchinni noodles with coconut cashew curry sauce and spiced chickpeas.

What’s more is that Zoni Foods is not the only vegan-friendly-venture that Yale-entrepreneurs are behind.

Another example of vegan friendly foodie ventures started by Yale students is Verb. Verb makes healthy, simple and ethically produced energy bars which are 100% vegan and gluten-free. “We wanted to make something we could feel good about eating every day.”

This ingenious idea with “No jitters. No crash. No chemicals” provides an energy bar made with the caffeine derived from green tea, paired with protein and carbohydrates to provide sustained energy levels. The perfect combination was eventually determined after trialling 127 different recipes until founders decided upon the perfect blend of 8 real ingredients, trialling them on the appetites of fellow Yale students.

With the next generation of business owners creating such mindful and sustainably sourced products, time will only tell what new vegan innovation will take off next. Our eyes are well and truly peeled !
