I don’t know what it’s been like where you are, but here in the UK it’s been hot hot hot. Us Brits have a tendency to whinge when it gets even slightly warm. Yet at the same time everyone is rushing to the supermarket to buy a paddling pool and BBQ equipment so as not to miss the short British summer.

Summer also means fresh fruit, peaches, plums and melons are all in abundance right now. My favourite of all has to be watermelon.

Watermelons are mostly water; about 92%. This refreshing fruit is soaked with nutrients. Each juicy bite has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids. There’s even a modest amount of potassium! So what better way to refresh and cool down than a big watermelon crush?

This recipe is super easy, all you need is a watermelon, some ice and a blender!

Refreshing Summertime Watermelon Crush


INGREDIENTS
– 1/4 large watermelon
– 3 handfuls ice

METHOD
– Add the ice to a blender and blitz for 30 seconds until crushed.
– Scoop out the watermelon flesh from the skin, add this into the blender with the crushed ice.
– Blitz again for 20 seconds until slushy.
– Pour into glasses and enjoy.
