This five-ingredient berry popsicle recipe is so quick and easy to make! The vegan starfruit berry popsicles are refreshing and full of hydration and vitamins. They’re just like frozen vitamin water!

The frozen dessert recipe is made with coconut water, star fruit, mint leaves, strawberries, and blueberries. The popsicles are perfect for keeping you cool, especially during the warmer months.

The recipe is so simple to make. Simply slice the fruit, divide into the popsicle moulds, throw in the blueberries and mint leaves, freeze overnight, and voila! They’ll be ready to serve.

For those that have never tried star fruit before, it is also known as carambola. The fruit comes from the Averrhoa carambola, a species of tree that is native to tropical Southeast Asia. Star fruit tends to have a tart or sour taste. The taste is often compared to being a mix of grapes, pears, apples, and citrus.
