How to Cook Vegan Like Kourtney Kardashian

Kourtney Kardashian Is "95 Percent" Vegan. Here’s What She Eats in a Day

Kourtney Kardashian is (mostly) vegan. The Keeping Up With the Kardashians star opened up about her current diet in a recent post on her Poosh website, and revealed that she is now eating plant-based foods almost all of the time.

“[Kourtney has] gone (mostly, like 95%) vegan,” the article explains. More specifically, while the California native still consumes butter and honey on occasion, she’s been “easing into [a vegan diet] for the past six to seven months with no meat.”

What’s refreshing about Kourtney’s approach to veganism is that she acknowledges that the shift to a plant-based lifestyle can be made in “small waves,” and knows that making the change isn’t easy for everyone. In fact, the Poosh founder admitted that in her early days as a vegan she “couldn’t resist and had a baked crab handroll while at dinner,” but soon learned to control her cravings.

“It’s all about balance and finding how and when you’re comfortable with incorporating the changes into your lifestyle,” the article states.

Why Did Kourtney Kardashian Go (Mostly) Vegan?

As for motivation, the eldest Kardashian sister is “leaning into a plant-based diet” because it’s better for the environment than a diet that includes meat and animal products.

An earlier Poosh post explained that Kardashian has gone vegan “for the sake of the planet” and explained how factory farms contribute to global warming, how farmland destroys native species’ homes and contributes to water pollution, and how it can destroy soil and forests.

It’s also likely that Kourtney was motivated to go vegan thanks to others in her life who are already plant-based. Kourtney’s younger sister, Kim Kardashian, is vegan and recruited Kourtney and their younger sister Khloé to go vegan in January.

Sister Boot Camp starts this month,” Kim wrote in an Instagram Story at the time. “Plant based and two workouts a day for 30 days to get our mind and body right this year!”

Another probable vegan influence in Kourtney’s life is her current boyfriend Travis Barker, who has been vegan since 2008. The Blink-182 drummer is an investor in vegan L.A. hotspot, Crossroads Kitchen, and is also a dedicated animal rights activist. Barker even launched his own vegan CBD line with tinctures for humans and their pets in March 2021.

Tacos

A dinner favorite of Kourtney’s is tacos made with Beyond Meat, which is a dish that Kim also loves.

While Beyond Meat makes a tasty plant-based taco filling, there are plenty of other vegan fillings you can try. For example, these cactus tacos are packed with cactus paddles, veggies and flavorful black bean salsa, while these pulled pork tacos are stuffed with vegan meat, onion rings, and French fries.

There’s also this vegan taco recipe, which you can enjoy at any point during the day, that’s made with a chickpea scramble base and a vegan meat filling.

Sushi

Since Kourtney admitted that her weakness even while sticking to a vegan diet is sushi, it’s no surprise that vegan sushi is one of her favorite meals. Instead of preparing or ordering her sushi with fish, Kourtney prefers to make crispy rice with vegetables such as avocado and edamame, and likes Nobu’s vegan options.

This recipe for Sushi Rolls With Prawns and Avocado features vegan prawns, avocado, cucumbers, and rice wrapped in nori. If you’d rather dine out or order in, you have options for that, too.
